Abstract

In this paper, we look at the differences in the philosophical underpinnings of the winemaking discipline and the pragmatics of serving the industry. We go on to briefly profile seven wineries and the opinions of study participants regarding the use of sensory profiling in their respective wineries and the region as a whole.
